Peru Showcases Cuisine Heritage through “Symphony of Flavors” Festival in Vietnam

On July 16, marking the 205th National Day of the Republic of Peru, the Embassy of Peru in Vietnam, in collaboration with JW Marriott Hotel & Suites Saigon in Ho Chi Minh City, hosted a reception to launch the culinary festival "Peru: Symphony of Flavors."

French Cuisine Festival Returns to Vietnam in April

The Peru culinary festival runs from July 16 to 19 at Nikura Restaurant and Pisco Hana Bar, both located at JW Marriott Hotel & Suites Saigon, showcasing the richness and diversity of Peruvian cuisine through the talent of two Peruvian chefs leading the hotel's culinary team: Executive Chef Ivan Casusol and Sous Chef Katerin Solis.

Executive Chef Ivan Casusol was born in Lima, Peru, the birthplace of Nikkei cuisine - a unique fusion of Japanese and Peruvian culinary traditions. He has more than a decade of international experience leading and launching Nikkei dining concepts across North America, the Middle East, Asia and Latin America.

His career has taken him from Peru to Mexico, Indonesia, Malaysia, India, Türkiye, Belize and the United Arab Emirates, where he has refined his expertise in Japanese-Peruvian culinary fusion.

As an executive chef specializing in Nikkei cuisine at Nikura, Chef Ivan blends Peru's Nikkei traditions with a global culinary vision.

His cuisine reflects the balance, precision and creativity that define Nikkei gastronomy while incorporating modern techniques and influences drawn from the diverse culinary cultures of the countries where he has worked.

Meanwhile, Sous Chef Katerin Solis received her culinary training in Peru and has built her career at renowned restaurants in Peru, Spain, the United Arab Emirates, Saudi Arabia and Vietnam.

Specializing in Nikkei cuisine, she combines modern techniques with traditional Japanese-Peruvian flavors. As Nikura's Sous Chef for Nikkei cuisine, she helps create dining experiences that blend Nikkei traditions with local ingredients and contemporary gastronomy.

For this culinary festival, Nikura will present an exclusive Peruvian menu from July 17 to 19, specially curated by Chefs Ivan Casusol and Katerin Solis. The menu features signature Peruvian dishes, including Jalea Mixta, Anticucho de Corazón, and Carapulcra Limeña, followed by the dessert Tres Leches infused with Peruvian pisco.

The event aims to strengthen friendship between Peru and Vietnam through the language of cuisine. It also provides an opportunity to demonstrate the richness and diversity of Peruvian gastronomy, promote cultural exchange, and help Vietnamese and international audiences gain a deeper understanding of the culinary traditions of the South American country.
